Mini Ham And Cheese Rolls

Yum! Super quick and easy crowd pleaser! I brought a tray of these to a friend's party, and they went so fast! Classic combination of flavors, so tasty! The next time I made them, they were for just my family, and we had some leftovers, but reheated in the toaster oven, they made a fantastic "on the go" breakfast. Really good stuff, who doesn't like ham and cheese? Great with American cheese, too!

Apple Pie by Grandma Ople

I can make Apple Pie!!! And it tastes like I've been making it FOREVER, yet this was my very first apple pie and just my 2nd pie ever! I almost feel like I can enter this in a bake off and WIN! Paired it with Ruth's Grandma's Pie Crust found here at Allrecipes, vanilla ice cream and a little whip cream - DECADENT. Not too rich or sweet, and definitely not tart. I thought the caramel sauce might cause it to taste too sweet - but all the flavors created a sauce that was just right. I took others' advice and added cinnamon, nutmeg and vanilla. I will make this again and again (I'll try the lattice weave crust next time)! Thank you Grandma Ople!

Buttercream Icing

This is a great decorator's frosting that can easily be adjusted, depending on the nature of your cake. I made mine as follows: One and half cups Crisco, 1/2 cup butter (softened), 2 t. vanilla extract (clear), 1/2 t. butter flavoring, 2 lbs. powdered sugar (8 cups), 6 T. heavy cream, and a pinch of salt. I added the extra salt to balance out the heavy sweetness of the sugar. If you want a stiffer frosting (suitable for making roses and other decorations), just reduce the amount of liquid.

Ruth's Grandma's Pie Crust

I've recently entered the world of pie making and this was my first pie crust ever (with my first apple pie - Grandma Ople's found in Allrecipes as well). I've heard so many horror stories and thought I'd just use the store bought ready made dough that you just lay in a pan and bake - it was good (enough) when I used it for my first pie (pecan). But my friend urged me to just try to roll out my own. And, I am no longer afraid! This was so easy to make and handle, and I am still shocked it came out so pretty (I posted a pic). I used butter flavor Crisco shortening as suggested and brushed the pie with lightly beaten egg before baking. Crust was super flaky, but sturdy enough. I am going to use this again and again - have plans for a pot pie dinner using this crust. (I do agree this recipe only makes enough for 1 double crust and 1 single crust pie. I'm making another pecan with the single crust I have left.) Anyone want the remaining ready-made pie crust I have in the freezer? :-)

Black Bean and Salsa Soup

Quick and easy and very yummy! I used a medium salsa and it still had a nice kick to it. Reserved some of the beans whole and added to the pot when warming. I found this on the thin side (maybe because I didn't puree all the beans), so I took out 4 tbsp of soup and mixed 1/2 tbsp of cornstarch, added back to the pot, and let boil for a minute or so. Helped to thicken it up nicely. The sour cream and onions really make this dish.

Apple Pie by Grandma Ople

OK- this was awesome! My husband still prefers my apple crumble pie but I liked this because it was so easy and love the gooey sauce. I did add half the sauce before adding the lattice and then topped it with the rest. PERFECT!

These were fantastic but I must say I like my party potatoes recipe better because it also calls for a brick or cream cheese. Don't skip on the bacon....even if you use the packaged bacon pieces!

Too Much Chocolate Cake

OMG OMG OMG!!!!!! I like to think of myself as a cake snob and I really wasn't too sure about the whole cake mix thing because I have tried many of the cake mix doctor recipes and they are ok, but not fabulous. Well, this has changed my mind! It is SOOO rich and SOOO good! I truly think it is the best chocolate cake I have ever made and I haven't even put a glaze on it yet. I had to bake mine about 10 minutes longer and it was just right- not dry in the least. I used butter flavored pam for the cake pan and also I think using the mini chocolate chips helped. I don't like biting into something crunchy in a cake and the mini chips just made like little soft melted choc. spots in cake!!!! YuM!!!!!
