Philadelphia, Pennsylvania

Called the Cradle of Liberty and Birthplace of the Nation, Philadelphia was where both the Declaration of Independence was signed and the United States Constitution. The City of Brotherly Love was settled first by Dutch, British, Irish, Scandinavians and Germans. Italian immigrants created what would become the famous Philly cheese steak and the pepper pot, while Americans of German decent developed regional wonders like scrapple, shoofly pie, the soft pretzel, and “plain and plenty” dishes like the chicken pot pie. Over the years, Philadelphia has grown in cultural and ethnic diversity, with large Puerto Rican, Jamaican, Asian, and Hispanic populations adding richness to the city’s stellar culinary scene.

Chewy Coconut Cookies

WOW!!! I bake a lot of cookies, and these are one of the BEST!! Super easy..I also toasted the coconut flakes 5 min. in the oven on low!!

Marbled Pumpkin Cheesecake

Made this for my daughter's 17th birthday. The whole family loved it. She wants me to make it again for Tahnksgiving instead of pumpkin pie...it wasthat good. Topped it w/a little whipped cream and an extra sprinkle of nutmeg. Yum!

Chicken and Red Bean Enchiladas

I actually love this recipe but have made some personal changes. I love using rotiserrie chicken; saves so much time. I found El Paso Enchilada Sauce in a can at my local supermarket. I use flour tortillas because I have never tried corn; I am more used to using flour ones. Sargento's has a low-fat Mexican shredded cheese blend that works great with this dish. I use black beans and corn; they are delicioso!!!
