The American West is big country. It takes in the vast high plains, the rugged mountain states, the arid Southwest, and the verdant Pacific Northwest. The cuisine that has grown up here reflects this diversity. It can be as simple as a buffalo burger tossed on an open flame or as well-heeled as a wine dinner served in a fancy San Francisco restaurant. There’s spicy Southwest cuisine from Arizona and New Mexico and delicate Asian-inspired cuisine along the coastal stretches of California, Oregon, and Washington. And let’s not forget that here in the West the wild salmon makes its last stand. Yes, there’s much to the claim that the West is best.

Stuffed Pasta Shells

Very yummy and easy to make! Added some Italian seasoning, garlic powder, and red pepper flakes. Will add sausage next time for a fuller meal.

Cilantro-Lime Rice

Okay, so I loved this recipe. I thought it was simple and great aaccompanied with chimichurri salmon and a pablano sauce. It was prefect. I didnt go by the meansurements. I squeezed almost a full lime and about 2 tbls cilantro into the rice (I cut the rice amount by half because I was only serving 2 people). It was fantastic and I will definatly be making this recipe again.

Paul's Pumpkin Bars

Eventhough this recipe is more like a cake, it is a fentastacily delicious recipe. Because almost no one in Japan has an oven, I made these in my tiny toaster oven in muffin tins. They became Paul's Pumpkin Cupcakes and they were AMAZING!!!
